3 granny smith apples, cored
1 tablespoon butter, softened, plus a little more to grease pan
1/4 cup brown sugar
1/4 cup finely chopped pecans
1/2 teaspoon cinnamon
a pinch of nutmeg
one cup apple juice
Warm oven to 375. Wash apples and core, set aside. Mix all ingredients (except apples) in a small bowl. Grease small glass or ceramic pan. Stuff apples with mixture and set upright in pan. Pour in apple juice. Cook for just over thirty minutes, frequently basting apples with juice. Poke them with a fork to know when they are ready. Be careful not to let them get too mushy! For a special treat, serve with vanilla ice cream.
