Blended cucumbers thicken a lightly sweet smoothie for a low-cal breakfast or a refreshing afternoon snack.
1 large cucumber, peeled, seeded and cut into chunks (1 cup)
1/2 cup vanilla yogurt
1/4 cup fresh blackberries
1–2 Tbs. honey or agave nectar
1/2 Tbs. lemon juice
Place all ingredients in blender, and blend until smooth. If too thin add a little bit of ice. Recipe makes two smoothies.
